The simplest icing is a glacé icing, containing icing sugar and water. This can be flavored and colored as desired, for example by using lemon juice in place of the water. More complicated icings can be made by beating fat into icing sugar (as in butter cream), by melting fat and sugar together, by using egg whites (as in royal icing), and by adding other ingredients such as glycerin (as in fondant). Some icings can be made from combinations of sugar and cream cheeses, or by using ground almonds (as in marzipan).

Spiced or Pickled Cherries

Take the largest and freshest red cherries you can get, and pack them in glass fruit jars, stems and all. Put little splints of wood across the tops of the fruit to prevent rising to the top. To every quart of cherries allow a cup of best pickling vinegar, and to every three quarts of fruit one pound of sugar and three sticks of whole cinnamon bark and one-half ounce of cloves; this quantity of spices is for all of the fruit. Boil the vinegar and spices and sugar for five minutes steady; turn out into a covered stoneware vessel, cover, and let it get cold. Then pour over the fruit and repeat this process three days in succession. Remove the heads of the cloves, for they will turn the fruit black. You may strain the vinegar after the first boiling, so as to take out the spices, if you choose. Seal as you would other fruit. Be sure that the syrup is cold before you pour it over the cherries.

Chocolate Cherry Cookies

Bring some history into your kitchen. Get the kids in the kitchen to help you bake some cherry treats. As you work together, talk to them about the early history of our country and our first President George Washington. This can lead to even more talks about our history. Don't leave it to the schools to teach your children the history of their country. Unfortunately, many of today's textbook don't even have the correct information in them. Let your kids learn from you as you build up our country in their eyes. Most kids like to bake cookies and these Chocolate Cherry Cookies would be a good project for you as they are simple and made from a cake mix. And they are diabetic friendly so even the diabetic children (of all ages) can enjoy them.

Chocolate Cherry Cookies (Necessary Ingredients):

Chocolate Cherry Cookies (Baking Instructions):

Preheat oven to 350 degrees. Spray baking sheets with nonstick cooking spray; set aside.

In a medium mixing bowl, beat cake mix, milk and extract with an electric mixer at low speed. When mixture looks crumbly, increase speed to medium and beat 2 minutes or until smooth dough forms. (Dough will be very sticky.) Coat hands with cooking spray and shape dough into 1-inch balls. Place balls 2 1/2 inches apart on baking sheets. Flatten each ball slightly. Place cherry half in center of each cookie. Bake 8-10 minutes or until cookies losse their shine and tops begin to crack. DO NOT OVERBAKE OR COOKIES WILL BE HARD WHEN COOLED. Remove to wire racks and cool completely.

Place chips and oil in a small microwave-safe bowl and cook a few seconds at a time, removing and stirring until chips are melted. Drizzle over cooled cookies. Allow drizzle to set before serving.
